Ingredients
- 1 tbsp Olive oil
- 40g Diced chorizo
- 2 Garlic cloves, finely chopped
- ¾ Small chili, deseeded and chopped
- ½ Leek, sliced
- 150ml White wine
- 500g Mussels in white wine (reserve the sauce)
- 260g Fish pie mix
- 200g Small new potatoes, halved and boiled
Method
- Sauté the Aromatics: Heat olive oil in a large saucepan over medium heat. Add the chorizo, garlic, chili, and leek. Cook for about 5 minutes until the leeks soften.
- Deglaze with Wine: Pour in the white wine and let it simmer for another 5 minutes.
- Enhance the Broth: Add only the sauce from the mussels and simmer for a couple more minutes.
- Cook the Fish: Stir in the fish pie mix, cover the pan with a lid, and let it simmer for 5 minutes.
- Add Mussels & Potatoes: Add the mussels, cover again, and cook for another 5 minutes. Finally, mix in the boiled potatoes, ensuring all the fish is cooked through before serving.
