40g Diced chorizo

¾ Small chili, deseeded and chopped
½ Leek, sliced
150ml White wine
500g Mussels in white wine (reserve the sauce)
260g Fish pie mix
200g Small new potatoes, halved and boiled

Method

Sauté the Aromatics: Heat olive oil in a large saucepan over medium heat. Add the chorizo, garlic, chili, and leek. Cook for about 5 minutes until the leeks soften.
Deglaze with Wine: Pour in the white wine and let it simmer for another 5 minutes.
Enhance the Broth: Add only the sauce from the mussels and simmer for a couple more minutes.
Cook the Fish: Stir in the fish pie mix, cover the pan with a lid, and let it simmer for 5 minutes.
Add Mussels & Potatoes: Add the mussels, cover again, and cook for another 5 minutes. Finally, mix in the boiled potatoes, ensuring all the fish is cooked through before serving.
